a simple pasta pomodoro
My boyfriend and I were treated to a meal at the beautiful River Cafe in Hammersmith for a graduation present. Everything we had was absolutely stunning, but the simplest dish of all was the most impressive. Its ridiculously easy to replicate at home as long as you’re really careful with choosing your ingredients, and that means you don’t have to pay a huge price to sample something the likes of Michael Caine and Stanley Tucci eat on the regular.
Ingredients
A high quality tomato passata
4 cloves of garlic
Good extra virgin olive oil
fresh basil leaves
Salt
Spaghetti
Recipe
Begin by finely chopping your garlic and adding it to a hot with a generous amount of olive oil. Stir until its fragrant but not brown.
As soon as the garlic starts to release its aroma, add the pasta and combine with the oil and garlic.
Keep stirring on a moderately high heat so the excess water evaporates and the sauce starts to thicken. Whilst this is happening, add a generous amount of salt.
When the sauce has started to thicken, turn the heat down and start to boil your pasta in salted water.
Once your pasta has softened, add a small handful of torn basil leaves to the sauce, stirring everything together.
Drain your pasta once cooked, and put straight in to the sauce. Combine everything together and serve with a grating of parmesan.
